I'm still in "sweet" mode at the minute & decided that it was time to replicate the original cupcake...good old British butterfly cakes. I have wonderful childhood memories of baking day in our house with the delicious smell of cakes baking in the Aga filling the kitchen....it was always a treat to help cut the wings to put on the top of the buttercream & jam filling & no self respecting children's party would be held without these little cakes.
So here we are.....a miniature touch of nostalgia!
I too remember these well from my childhood. Here in Australia they were made with cream and red jelly (no jam)but either way they are yummy!!!

How cute! My mom used to make these with vanilla pudding and confectioners sugar sprinkled on the top. :)
